This is harder than converting a clean PDF: photographs bring uneven lighting, slight camera angles, and tables with no visible gridlines. The tool reads the header row to learn what each column means, then maps every other line into place by position — so bordered tables, borderless tables aligned only by spacing, and messy layouts are all handled. Where a later page doesn't reprint its headers, the column layout carries forward from the page that did.

Helpful to know before you convert
Conversion quality depends far more on your source file than on any setting. A digital PDF needs no character recognition at all and is the most reliable route by a wide margin. A flat 300 DPI scan comes next. A phone photograph can work well, but a low-resolution or angled shot gives the recogniser too little to work with — and that, rather than any bug, is behind the large majority of imperfect results.
